Jeff has been off the last couple of days and Zeker has been having lots of fun hanging out with his dad.

and being silly.But, I have to tell you about our dinner last night because it was so delicious. It was a simple tomato sauce over pasta and zucchini strips (which looked something like this). The sauce was very easy to make. You can find the recipe here. Oh my gosh, it was SO good, and I loved it over the zucchini. I have wanted to try more of her recipes under her "budget" category and this one was definitely a winner. Even Zeker ate everything in his bowl, and then moved onto my lap to finish what was left on my plate. This is a huge compliment considering this is the face I typically get when I try to feed him something that is not crepes...
I read that blog and have been dying to try it out, too! Sounds too simple :o) Glad to hear it's delicious from someone I trust. Miss you guys.
ReplyDeleteOh my goodness, I got super excited when I read your post! I read the smitten kitchen blog but just got depressed when I read about the yummy tomato sauce since I wouldn't be able to eat it over pasta. The zucchini strips sound perfect! I am going to try it next week!
